Last weekend we had a last minute opportunity to head out of town to visit with old friends that we hadn't seen in a while. We were meeting at a home on the lake for the weekend where the kids would play together and the adults would hang out with food and wine. We were in charge of picking the wine and cooking dinner. We decided on Dover Sole because the local market had it in stock and it is a nice, mild white fish. We paired the fish with Villa Maria’s Private Bin Sauvignon Blanc which is crisp and fruity. For years, we share our best advice on pairing wine and food. Don't overthink it. There is a tendency to feel like we have to follow the “rules” when it comes to wine when really you should follow your palate. What types of wine do you enjoy? There is something about sharing a glass of wine with your friends as you watch the sun set over the lake. Talk about the perfect ending to an afternoon. And as the sun set, we prepared the Dover Sole. It was delicious. I actually heard one of the kids whisper “this is the best fish I’ve ever had”. The Villa Maria Sauvignon Blanc paired wonderfully, and made a fantastic sauce to boot. It was a perfect ending to what had been a perfect day.

This was a great meal. Everyone really enjoyed it, and best of all, IT IS QUICK! Start to finish is under 30 minutes, and the result is fantastic.
This looks terrific. Hubby isnt much of a fish eater but I love it. I havent cooked much with wines, so might omit it but I wouldnt think that would be so bad. I love the idea of dill on the fish.

What a meal fit for a gourmet and paired with wine I am getting hungry and have an urge for a nice sauvignon blanc. This meal would be great for having guests over or a party. I would make the sole for our family also.

I have been getting my fish ‘drunk’ for ages now, beurre blanc is definitely one of my favorite sauces for white fish, I like to get adventurous with wine in my kitchen! No drop goes to waste! 🙂

I haven’t had DOVER SOLE in a very long time, however, I have quite a fond memory of it – when I ordered it VIA room service in London and…… Uhhh it wound up being $80! LOL!!! But I didn’t realize that until after I ate it!
