Pan Fried Dover Sole with Dill Beurre Blanc Recipe
Last weekend we had a last minute opportunity to head out of town to visit with old friends that we hadn't seen in a while. We were meeting at a home on the lake for the weekend where the kids would play together and the adults would hang out with food and wine. We were in charge of picking the wine and cooking dinner. We decided on Dover Sole because the local market had it in stock and it is a nice, mild white fish. We paired the fish with Villa Maria’s Private Bin Sauvignon Blanc which is crisp and fruity. And as the sun set, we prepared the Dover Sole. It was delicious. I actually heard one of the kids whisper “this is the best fish I’ve ever had”. Pan Fried Dover Sole Recipe with Dill Beurre Blanc Recipe
Ingredients for the fish
Directions for the fish
- Heat a few tablespoons of olive oil in a nonstick pan.
- Season the fish with salt.
- When the oil is hot, lightly dredge the fish in the flour, and then place in the pan. Dover Sole is thin, so it will only take a minute to cook on each side.
- When the fish is cooked, remove from pan and set aside.
Ingredients for the sauce
- 1/4 cup plus 1 Tbsp unsalted butter
- 1/2 shallot, fine dice
- 1/2 cup Villa Maria Sauvignon Blanc
- Juice of 2 lemons
- 1 Tbsp fresh dill, chopped
- 1 Roma tomato, seeded and thinly sliced
- 1/4 medium cucumber, seeded and thinly sliced
- salt and pepper
Directions for the sauce
- Heat 1 tbsp of butter in a small pan. When melted, add the shallots and cook over a medium low flame until soft.
- Add the Villa Maria wine and lemon juice. Increase the heat to medium high and reduce by 2/3 volume.
- Remove the sauce from the flame and whisk in the butter, stirring constantly. Once the butter is incorporated, mix in the tomatoes, cucumber, and dill. Taste and adjust with salt and pepper.
- Pour the sauce over the Dover Sole and serve immediately.
