CARAMEL APPLE CUPCAKES
WITH CINNAMON CREAM CHEESE FROSTING
INGREDIENTS FOR THE CUPCAKES
2 cups granulated sugar
2 large eggs
1/2 cup unsalted butter, melted
2 teaspoons pure vanilla extract
2 cups all purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
4 apples, cored, peeled, and chopped
For the frosting:
8 ounces cream cheese, room temperature
4 tablespoons butter, room temperature
4 cups powdered sugar
1 teaspoon vanilla extract
1 teaspoon cinnamon
To make the cupcakes
Preheat the oven to 350F. Line muffin tin with liners; set aside.
Combine sugar, eggs, butter, and vanilla extract until blended in a large bowl with an electric mixer set on low.
In a second large bowl, combine flour cinnamon, baking soda, baking powder, and salt on low.
Add dry mixture to the butter mixture mixing on low until combined.
Fold the apples into finished mixture.
Bake for 15-20 minutes or until toothpick comes out clean. Cool completely before frosting.
To make the frosting
Combine cream cheese, butter, and vanilla. Slowly add powdered sugar and cinnamon, mixing well.
