Schnitzel is a dish that holds a special place in my heart. It is a dish that I can remember eating as a young child around my grandmother's kitchen table, so to me, it is comfort food. We recently acquired an air fryer, and after cooking numerous meals I began to wonder if air fryer Schnitzel would work. Well, it turns out it works wonderfully! We use the 8 qt Power Air Fryer Pro, which is the perfect size for our family of 5, but may be too large for smaller families or small kitchens. If that is the case, I would look at the 6 qt version of the machine. Both share the same features, with the main difference being oven capacity.
Can you cook Schnitzel in air fryer? I use the air fryer all the time; at least 2-3 times a week. I like this model because it offers so many ways to cook food. You have the racks, which we use in this recipe, but the machine also comes with a spinning basket for things like potatoes, a rotisserie attachment for all sorts of meats, and a skewer attachment for…well.. skewers.
I have used every one of these methods of cooking, and they all work great. Really the only function that I have not used is the dehydration mode; we will get to that one day. Anyway, enough about the machine we are using to make our air fryer Schnitzel; let's get cooking!
The first thing we need to do in order to make our pork schnitzel air fryer is prep the meat. Now we used pork here, as that is the traditional cut, but you could use chicken breast and it would come out great. Line a flat sturdy surface with plastic wrap and put your pieces of pork on top. Season the pork with salt and pepper, and then cover with another layer of plastic wrap. Now prepare to release some aggression!
Using a sturdy thick cooks spoon or a purpose made meat pounder (no teeth…flat sided, like the linked one), smack the pork. You want to strike down while making a sliding motion as you hit the meat. The goal here is to pound the pork thin and even; we are talking no thicker than 1/4 inch to make the perfect schnitzel im airfryer.
Once we have beaten our pork into nice thin pieces we can prep our coating. For this you need three bowls. In bowl one, place the flour. In bowl two, whisk the eggs and milk together. Put the breadcrumbs in bowl number three and add a teaspoon of kosher salt and the olive oil. Mix the oil together with the breadcrumbs until everything is evenly distributed (fingers work best for this task). So you know, we are adding the oil here to help the breadcrumbs crispen and brown in the air fryer.
Now it's time to bread our pork cutlets. For this step we will work with one piece of cutlet at a time. First lightly coat the pork in the flour.
Next, give it a bath in the egg wash. Be sure to allow the excess egg to drain from the pork before moving on to the next step.
Now coat the pork with the seasoned breadcrumbs. We are not looking for a thick coating here; just a nice and even thin coating.
Repeat the breading process for the rest of the pork.
Get ready for excitement, it is time to actually cook our schnitzel im airfryer! Preheat the air fryer for 3 minutes at 400 degrees. While that is happening, place your breaded pork cutlets onto the air fryer racks. Do NOT overload the racks; no more than 2-3 pieces of meat on each rack.
Place the racks in the air fryer and cook for around 16-18 minutes. I found it helpful to pause things at the halfway mark to rotate my racks, placing my lowest rack up top, and my top rack at the bottom of the air fryer. You can turn the cutlets themselves as well if you like.
