Dark chocolate toffee is my favorite but I am an equal opportunity toffee lover so it doesn't have to be dark chocolate, just good chocolate. - While your water for the double boiler is heating: line a chilled baking sheet with parchment paper. Chop your almonds and toffee candy into different sized pieces, leave some of each slightly larger.
- Slowly melt your chocolate over a double boiler, stirring until smooth and creamy. Stir an additional minute after all of the chocolate has melted to ensure you’ll have the best texture.
- Quickly pour the chocolate onto the parchment paper lined tray. Sprinkle your almonds and toffee on top, try to have an even distribution of the two so each bite will have big flavor!
- Cover carefully, making sure that the plastic wrap does not touch the chocolate or candy and place in the refrigerator until solid. Remove the chocolate disc and paper from the tray. Hold a few inches over the counter and drop. This will break your chocolate in to pieces. Or you may use a sharp knife and cut the chocolate into pieces (as we did).
- Store in an airtight container on the counter and enjoy!
