Every year we visit friends and spend Halloween with them. We live in a great neighborhood but unfortunately there are only 5-6 house with kids and there are no other neighborhoods within close walking distance so we travel a little. We never go far but we always spend the evening with friends. We also always bring something. We almost always bring an appetizer and a dessert. You can even make this a rectangular kit kat cake by using a different pan. This kit kat cake recipe from scratch will delight everyone! It is also a GREAT thing to make with leftover Halloween candy. This Kit Kat Cake Recipe is a delicious concoction that will most certainly be a hit with adults and kids.
Kit Kat Cake Recipe
For the yellow cake:
- 1 cup cake flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon kosher salt
- 3/4 cups unsalted butter, room temperature
- 1 cup granulated sugar
- 3 eggs, room temperature
- 8 Kit Kat pieces, chopped
- 1/2 teaspoon pure vanilla extract
- For the chocolate frosting:
- 4 tablespoons butter
- 2 ounces unsweetened chocolate, rough chop
- 2 cups powdered sugar
- 1/4 cup whole milk
- 1 teaspoon pure vanilla extract
For the white frosting:
- 1/2 cup butter, room temperature
- 3 cups powdered sugar
- 1/2 teaspoon pure vanilla extract
- 2 tablespoons whole milk
For the cake:
- Preheat the oven to 350 degrees. Grease and flour two 6-inch cake pans.
- Sift together the dry ingredients. Set aside. Beat the butter until creamy with an electric mixer in a large bowl. Add the sugar and beat until light and fluffy. Beat the eggs into the mixture one at a time, and then add the vanilla. Mix in the dry ingredients, and then fold in the Kit Kat pieces.
- Divide the batter into the two pans. Bake for about 25-30 minutes, or until light golden and a toothpick comes out clean when inserted into the center of the cake. Allow the cake to cool for 15 minutes in the pan, and then remove and transfer to wire racks. Cool the cake completely before frosting.
For the chocolate frosting:
- In a small saucepan, melt the butter and the chocolate over a very low heat. Separately, in a medium sized bowl, mix together the sugar, milk, and vanilla. Wisk in the melted chocolate. Put the frosting in the refrigerator for about 10-15 minutes, or until cool.
For the white frosting:
- Beat the butter in a medium bowl with an electric mixer until creamy. Add in the powdered sugar a little at a time, beating until smooth. Finally, beat in the vanilla and milk.
- To finish the cake:
- Cut each cake into two layers. Put together the cake with chocolate frosting in between each layer. Frost the outside of the cake with a thin layer of the chocolate frosting. Refrigerate the cake until the frosting completely sets.
- Once the chocolate layer is set, frost the cake with the white frosting, and then garnish the sides with chopped Kit Kat.
