Ingredients

  • 1 Tbsp olive oil
  • 1 pound 80/20 ground beef
  • 1 onion, small chop
  • 6 cloves garlic, small chop
  • 1 Tbsp Worcestershire sauce
  • 3 Tbsp tomato paste
  • 2 tsp oregano
  • 3 Roma tomatoes, medium chop
  • 2 Tbsp Italian parsley, chopped
  • 4 cups low low-sodium beef broth
  • 2 cups cheddar cheese, shredded
  • 2 cups colby-jack cheese, shredded
  • 1 box pasta (rotini, penne, or elbow macaroni work well)
  • salt and pepper to taste

Cook Onion

Directions

Set the pressure cooker to saute. Add the olive oil, garlic, and onion; cook until the onion begins to turn translucent.

Brown Ground Beef

Now add the ground beef to the instant pot; continue to saute until the beef is browned.

Add Worcestershire

Add the Worcestershire sauce and stir.

Add Tomato

Next, add the tomato paste and stir until all the beef is coated.

Add Rest of herbs and and fresh tomato

Add the oregano, fresh tomatoes, and chopped parsley to the instant pot.

Add Stock

Now add the stock and stir everything together.

Add Pasta

Add the pasta and stir. Make sure the pasta is all submerged in the stock.

Set Pressure cooker time

Turn off the saute setting on the pressure cooker. Add the top to the instant pot and pressure cook for 1/2 the recommended time that is listed on the box of pasta. Once the instant pot is done cooking, immediately release the pressure.

Add Cheese into Instant Pot

Open the instant pot and add the cheese. Stir well until the cheese is melted.
