Quick and Easy Corn on the Cob Instant Pot Recipe
It's summer time, and that lazy evenings, grilling out, and of course eating lots of corn on the cob. Now I am a fan of corn cooked all sorts of ways; grilled, steamed, sauteed, or roasted…I love it. One of my favorite ways to cook corn on the cob is in the instant pot. Cooking the corn in a pressure cooker is super easy, and the corn tastes absolutely fantastic. This instant pot recipe for corn on the cob will leave you with a side dish that is just bursting with flavor; it's almost like the instant pot intensifies the flavor of the corn. Now you can use frozen corn on the cob in the instant pot, but I really prefer fresh ears for this recipe. So go ahead and run down to the farmers market, you need 8 ears of corn. Cook Corn on the Cob Instant Pot
Prep time 5 minutes | Serves 8
Cooking time 13 minutes to come to pressure, 1 minute cooking time, 2 minutes quick pressure release time
Ingredients
- 8 ears corn on the cob
- 1 tsp dried basil leaf
- 1/2 tsp garlic powder
- ¼ cup unsalted butter
- salt to taste
- pepper to taste
Directions
- Add 1 ½ cups of water to the inner pot of the Instant Pot.
- Place a steamer insert into the instant pot. Toss the raw corn with the basil and garlic, then place corn in the pressure cooker.
- Close lid and set the instant pot for a manual high-pressure cooking time of 1 minute. Allow for a quick pressure release when the cooking time has finished (this means use the valve to release pressure).
- Add butter evenly over the corn, season with salt, serve and enjoy.
