Directions
- Start with the sweet sticky rice. Place the apple juice, nutmeg, cinnamon, and honey in a pot. Bring to a boil.
- Add the rice, stir, cover, and remove from heat. Allow the mixture to rest for 5 minutes.
- Transfer the rice to a shallow pan and refrigerate until cold.
- Heat the butter in a saute pan over a medium flame. Once hot and bubbling, add the apples, walnuts, and sugar.
- Cook for about five minutes, until the apples soften and begin to slightly brown.
- Stir in the cinnamon and remove from the flame. Refrigerate.
- Next, assemble the caramel apple tart. You need 1 box of mini tartlet shells, 1 recipe of rice mixture, and 1 recipe of apple mixture.
- Fill each tartlet shell to the top with the rice mixture (about 1 heaping tablespoon of rice). Press the rice lightly into the shell.
- Top with the caramel apple mixture. Enjoy.
