Potatoes are one of my most favorite things. I love almost anything that you can do with potatoes. In fact when my mother was pregnant with me, her number one craving was McDonald's french fries. My mom used to say that she thought I was going to come out like a french fry. Potatoes are still are one of my favorite foods to this day. In fact, I rarely meet a potato that I don't like or won't try. This versatile recipe can be dressed up in so many ways. Add cheese and bacon for a fun twist or chili for a football game and you have a great appetizer. No matter what you do, you cannot go wrong with these delicious potatoes.

Ingredients
- 2-3 pounds of Yukon gold potatoes, as similarly sized as possible
- 2-4 cloves of garlic
- fresh thyme
- 1-2 tablespoons butter, avocado oil or extra virgin olive oil
- Himalayan salt and pepper to taste
Directions
- Preheat your oven to 400 degrees.
- Peel and smash the garlic cloves and rub inside your oven safe baking dish.
- Drizzle some of the butter or oil on the bottom of the dish.
- Carefully use a sharp knife to thin slice the potatoes without cutting all the way through, you’ll want them too fan out but not be cut into different pieces.
- Place in the baking dish, add the rest of the butter or oil, salt and pepper and fresh thyme.
- Bake for 30 to 40 minutes depending on how crispy you would like the potatoes to be. I pulled the dish a couple times and carefully spooned some of the butter/oil from the bottom of the dish back on top of the potatoes to help keep them from drying out.
- Allow to cool for a few minutes before serving.
