Ingredients

• 5 peppers, mixed colors
• 1 lb ground beef
• 8 oz cream cheese
• 2 tbsp chipotle seasoning
• 1 cup shredded cheddar cheese
• Greek yogurt as needed
• fresh cilantro for garnish

Directions

1. Brown ground beef, drain.
2. Add cream cheese, ground beef, chipotle seasoning to a bowl and mix together.
3. Cut 3 peppers in half, remove seeds and discard. Wash peppers thoroughly.
4. Spoon the ground beef mixture into halved peppers. Top generously with cheese.
5. Place into air fryer on the sheet tray lined with foil. Cook for about 8-10 minutes on the convection setting.
6. When the peppers are a golden brown remove from air fryer. Garnish with cilantro and a scoop of Greek yogurt.
