Directions for the red velvet cupcakes
- Preheat your oven to 350 degrees and line pans with cupcake liners.
- Empty the cake mix into a large mixing bowl.
- Add eggs, oil, milk, greek yogurt, and vanilla extract and stir until smooth.
- Fill cupcake liners 3/4 full and bake for 15-20 min or until inserted toothpick comes out clean.
- Let cool completely before adding frosting.

I love using a really good boxed cake mix. These mixes are developed and then tested by scientists. Because baking is a science I can appreciate when a company has an amazing recipe and so many times I can just go with a boxed cake mix.
