Red Velvet is something that I really didn't try until I got married. My parents didn't particularly care for it so red velvet anything just wasn't part of my childhood.   1. Preheat your oven to 350 degrees and line pans with cupcake liners.
  2. Empty cake mix into a large mixing bowl.
  3. Add eggs, oil, milk, greek yogurt and vanilla extract and stir until smooth.
  4. Fill cupcake liners 3/4 full and bake for 15-20 min or until inserted toothpick comes out clean.
  5. Let cool completely before adding frosting.

Directions for whipped frosting

  1. With an electric mixer beat cream cheese and powdered sugar until smooth.
  2. Add vanilla extract.
  3. SLOWLY add heavy whipping cream and beat until fluffy.
  4. Pipe onto cooled cupcakes and top with blueberries to complete your patriotic cupcakes!

I love using a really good boxed cake mix. These mixes are developed and then tested by scientists. Because baking is a science so I can totally appreciate when a company has that amazing recipe and so many times I can just go with a boxed cake mix. While this is a red velvet cupcake recipe using box cake mix, this recipe is not overly sweet or heavy. The frosting is very light and airy.
