I am participating in the Beano® “Be Natural” Virtual Cook-off with some other bloggers and my recipe must be delicious and “gas-producing.” The recipe will be judged by a panel and then five finalists will be picked. All five finalists will win a set of all-natural cookware. Finally, the Beano online community will then vote on Facebook and the grand prize winner gets a trip to New York City to attend classes at the Natural Gourmet Institute.
My challenge was to come up with a recipe using at least five gas producing ingredients. So I give you my mother's Spicy Corn & Bean Salad.
SPICY CORN & BEAN SALAD RECIPE
INGREDIENTS
Red Kidney Beans (canned) – Rinsed and Drained
Pinto Beans (canned) – Rinsed and Drained
Corn (frozen)
1/2 Large Red Onion – diced
1 Medium size Red Pepper – diced
Sprig of Parsley – chopped small
Red Pepper Flakes
Tabasco – 2 teaspoons
Italian Dressing (I use Viva Italian) – 2-3 tablespoons
Salt & Pepper (to taste)
DIRECTIONS
Combine beans, corn, onion, red pepper and parsley in a bowl. Let the mixture stand about 10-15 minutes so that the flavors combine. Add Italian dressing, Tabasco and red pepper flakes. Toss it all together, garnish with a sprig of parsley and serve. I chill this salad a little because I think that it tastes delicious cold but room temperature is great as well.

We’re having a recipe like this today for the big Michigan v. Notre Dame game! We also use Beano and it’s a great help for post tailgating! 🙂
