Spiced Eggs and Flatbread Recipe

It's a new year, and with it of course comes new resolutions. One of my resolutions this year has to do with my diet. I want to make more of an effort to eat a energy-boosting, protein packed breakfast every day of the week. When I miss breakfast, I've noticed I get sluggish as the day goes on. I had been missing breakfasts. I don't know exactly how it happened, but over the past year I got out of the habit of starting my day off right. Well no more. We hope that you enjoy this Spiced Eggs and Flatbread Recipe.

I headed off to Publix to fill my kitchen with all of the tasty ingredients that I would need to make my breakfast resolution a reality. I wanted something fairly simple, but a little out of the ordinary. Now I had visited a friend in Boston a few months ago, and she had served a breakfast of spiced eggs. I decided to play on that idea.

So I bought some eggs, a bit of arugula, some naan flatbread, and Dannon Light & Fit Greek Yogurt Plain. I would use the flatbread as a base for the dish, and I would bring in the spices with a yogurt spread. Then I would top that off with some arugula, eggs, and tomato. My mouth is watering as I think about it!

I went with the Dannon Light & Fit Greek Yogurt Plain for a few reasons. One, Dannon is a brand that I trust. I have been eating their yogurt since I was a little girl. Second, Dannon Light & Fit Greek Yogurt Plain contains no fat while packing 5 grams of protein in each serving. Third, the yogurt is delicious! It also comes in a large variety of flavors, making it the perfect pick-me-up when you need a quick energy boost. I always have some Dannon yogurt in the fridge for those moments when I feel the yawn coming on and there is still work to do.

I also grabbed a bottle of STōK™ Cold Brew Coffee. I love my coffee in the morning, and the SToK coffee is brewed with a higher ratio of Arabica based beans to water than your typical cup of hot coffee. The cold brew process creates a drink that is smooth, bold, and frankly delicious. Great coffee is great coffee, and the SToK Cold Brew has become a favorite of mine.

Then I headed home and started cooking, and let me tell you, the results were fantastic. The spiced eggs with Dannon yogurt recipe will now be in my households regular breakfast lineup.

  3. Those eggs look great and on the flatbread with the yogurt makes them a great breakfast for the kids to get before they go to school. I never saw that coffee but it will be a great switch from my hot morning brew.
