Ingredients

  • About 4 cups of pink, purple, Yukon gold and white fingerling potatoes cut into roughly ½” pieces
  • 1lb local kielbasa or sausage
  • ½ cup of fresh grated hard cheese of your choice (we used parmesan)
  • 2 cups fresh broccoli, chopped (including parts of the smaller stock)
  • extra virgin olive oil

Directions

  1. Start by preheating oven your to 450 degrees and thoroughly washing all veggies.
  2. Crumble the kielbasa (and remove casing if there) and start to cook. While this is going prepare your veggies.
  3. When the sausage is about ½ of the way cooked through add in potatoes and broccoli stock pieces (save broccoli florets). Mix thoroughly, there should be enough fat from cooking the sausage to thoroughly cover the bottom of the skillet and all of ingredients, if not, add a bit of extra virgin olive oil.
  4. Place your skillet in the oven for about 15 minutes, check and stir. You’ll want to see the potatoes starting to crisp up.
  5. Set the timer for another 15 minutes, stir add in broccoli florets and sprinkle the grated cheese on top.
  6. Cook about another 10 minutes, let cool for a few minutes before serving.

    This looks soo good! I tried purple potatoes once, at the time I didn’t realize they were supposed to be purple and freaked when I cut them open. Then tried to make mashed potatoes, kind of a wierd lavender. But this is very yummy looking and they are so good for you! I’d love to try this!
