We love pumpkin in this house. I love the taste of a freshly baked pumpkin pie topped with lots of whipped cream at Thanksgiving and pretty much any time of the year. However did you know that pumpkin is actually a very versatile superfood that can be used year round? I was recently challenged to use Libby’s Pumpkin to create the perfect spring recipe. We created a Thanksgiving dessert that is so light and delicious that you might just love it as much as we do! Even better that it's one of our recipes with butterscotch pudding. Pumpkin the Superfood

Pumpkin is a superfood and:

  • is a good source of fiber and a great source of Vitamin A.
  • can reduce the fat in some of your favorite recipes.
  • can also be stirred into jarred or prepared sauces to reduce sodium per serving.
  • can be used as a substitute in your favorite recipes to reduce calories.

Libby's Pumpkin can be used year round for a variety of recipes

Did you know that Pumpkin is a versatile vegetable in that can be used in a variety of sweet and savory dishes throughout the year? I have never thought about it like that but pumpkin really is something that can be used year round. Pumpkin also works great as an add-in. Stir a couple of tablespoons into a variety of foods for an added boost of fiber, Vitamin A and flavor – oatmeal, smoothies, macaroni and cheese. We have started adding it to our smoothies. Pumpkin makes our smoothies even more creamy and delicious. Keeping pumpkin on hand throughout the year is also a great idea. Leftover pumpkin can be portioned or put into an ice try and stored in the freezer so it ready whenever you want it.

Pumpkin Butterscotch Mousse Parfait

There are some great pumpkin desserts that I absolutely love like weight watchers pumpkin custard, pumpkin mousse cupcakes, sugar free pumpkin dip and even dairy free pumpkin mousse. This recipe took all of that but one step further.

Pumpkin Butterscotch Parfait

This Pumpkin Butterscotch Parfait is simply delicious. The flavors meld well together and are amazing. Try it out and let me know what you think.

Ingredients for the Pumpkin Butterscotch Pudding Parfait

  • 1 pkg instant Jello vanilla pudding mix (5.1 oz)
  • 3 cups milk
  • 1/4 tsp nutmeg
  • 1/8 tsp ginger
  • 1/2 can Libby's pumpkin puree (15 ounce can)
  • 3 cups plus 3 Tbsp heavy cream
  • 1/2 cup powdered sugar
  • 1/4 tsp pure vanilla extract
  • 1/3 cup butterscotch chips
  • 1 box gingersnap cookies

Pumpkin Butterscotch Mousse ParfaitDirections for the Pumpkin Butterscotch Pudding Parfait

  1. In a large bowl, mix Jello, milk, nutmeg, and ginger for two minutes.  Wisk in the pumpkin and set aside.
  2. In a separate bowl, mix 3 cups of cream with the powdered sugar and vanilla to stiff peaks.
  3. Take half of the whipped cream and fold it into the pudding mix.
  4. In a small bowl, combine the butterscotch and 3 tbsp of cream.  Microwave for 30 seconds, and then allow to rest for one minute.  Wisk until smooth.
  5. Smash up some gingersnap cookies.

Assemble the butterscotch parfait

  1. Drizzle a little butterscotch into a cup.
  2. Add a layer of smashed gingersnap cookies.
  3. Drizzle a little more butterscotch over the cookies.
  4. Add a layer of pumpkin mousse.
  5. Add a layer of whipped cream.
  6. Repeat assembly steps two through five.
  7. Garnish with a gingersnap.

    I love pumpkin. My mom used to make us kids ‘pumpkin custard’. She used Libby’s canned pumpkin (not the pie filling) and followed the recipe on the can for pumpkin pie. She just didn’t bother making the crust for pie. I can still smell that pumpkin custard when I would come home from school. It didn’t last long. My brothers and sisters scarfed it up in no time. I hadn’t thought of putting some in smoothies. Good idea.
