Orange Fluff Jello Salad

Nothing says summer like a cold, refreshing salad ^[3]. Now I usually go for savory salad recipes, ^[4] but every once in a while I want something a little different and fun. Well this cold salad recipe ^[5] is in no way savory and has Mandarin oranges in it, which are one of my faves. This salad is also a bit of a throwback in time; have you ever had jello ^[6] ambrosia salad? How about a jello fruit salad with marshmallows or fruit fluff; maybe even a orange dreamsicle salad? This stuff was all the rage once, and it tastes better than you might think. There is a reason this stuff was popular…it does taste great. This particular jello fluff recipe is orange ^[7] based, and it get's its fluff from Cool Whip and vanilla pudding. I know…it sounds weird. Orange Fluff Jello Salad

Ingredients

• 1 box of orange Jello ^[8]
• 1 box of instant vanilla pudding ^[9]
• 1 cup of boiling water
• ½ cup of ice
• 1 container of Cool Whip ^[10]
• 1 can of mandarin oranges ^[11] or 2 small fresh mandarin oranges, chopped
• 1.5 cups of miniature marshmallows ^[12]

Directions

1. 1. In a small saucepan, bring the 1 cup of water to a boil. Transfer the water to a large mixing bowl and add the jello mix, stirring constantly. Continue to stir until all of the Jello powder is dissolved.
   2. Add in ½ a cup of ice and stir until the ice is fully melted.
   3. Transfer the bowl the the refrigerator and allow it to rest for about 20 minutes.
   4. Remove the Jello from fridge and whisk ^[13] in the vanilla pudding mix. Place back into fridge for 20 minutes, or until the mixture thickens.
   5. Remove the bowl from fridge and fold in the cool whip, oranges and marshmallows. Do not overmix.
   6. Place back into fridge to chill for at least 2 hours before serving.
