Lemon Verbena Pound Cake with Strawberries Recipe
In this twist on an old (and much loved) pound cake recipe, I have added fresh strawberries and COOL WHIP whipped topping to create a delicious dessert perfect for everyday.
Lemon Verbena Pound Cake with COOL WHIP & Strawberries
1 cup cake flour (not the self-rising kind)
1/2 teaspoon baking powder
1/4 teaspoon salt
4 tablespoons finely chopped fresh lemon verbena
No lemon verbena? Use 1 1/2 tbsp fresh lemon zest
1 tablespoon of fresh lemon zest
1 stick softened, unsalted butter
1/2 cup granulated sugar
1/2 cup confectioner's sugar
3 large eggs
1 teaspoon vanilla
2 tablespoons milk
2 tablespoons fresh lemon juice
Preheat oven to 325°F.
Cut your cooled pound cake into 1 inch slices. Add one generous tablespoon of COOL WHIP onto one slice of pound cake and spread to edges. Layer 1 large, sliced strawberry on top. Add another slice of pound cake. Repeat steps 2 & 3. Add a generous teaspoon of COOL WHIP for garnish.
