Although it can be hot and sticky during the summer, it's still one of my favorite seasons. When it gets too hot we retreat to the air conditioning, but for the most part my family and I love partaking in activities outside. Playing at our local park, swimming, picnics, etc. are some of our favorite things to do when the weather permits. Another big one is grilling out.  We recently had friends over and my husband came up with this grilled garlic shrimp recipe. Needless to say, it was a HUGE hit. The flavor of the shrimp plays wonderfully with the tangy roasted pepper aioli. Ingredients for the shrimp

  • 30 large shrimp, peeled and deveined
  • 4 cloves garlic, chopped
  • 2 tsp thyme
  • 1 large lime, juiced
  • 2 tbsp extra virgin olive oil
  • salt
  • freshly ground pepper

  1. Toss the shrimp with all of the ingredients in the shrimp section (salt and pepper to taste) and set aside.
  2. Prepare a grill with a medium heat.  Skewer the shrimp (5 shrimp per skewer) and grill until done.
  3. Place the bell pepper and garlic in a food processor and puree.
  4. Add the remaining ingredients (salt and pepper to taste) and process until everything pulls together and is well mixed.
  5. Plate your food and enjoy!

Note: You can roast the pepper on the grill prior to cooking the shrimp. Just cook it over a medium heat, turning periodically, until all of the skin is blistered and blackened. Then place the pepper in a bowl and cover with plastic wrap. Let it steam for about 15 minutes. At this point, you should be able to easily remove the skin and seeds. Don't rinse under water (you will rinse away flavor)…it's ok if the pepper is a bit “rustic” looking.

    This is a great recipe to try. And your pics are awesome!
    There’s no better way to beat the heat than to enjoy a glass of cold lemonade and indulge in a cold cut sandwich. Sometimes we even make them for dinner too because it’s too hot to fire up the stove/oven.
