I'm excited! It's that time of year again. No, I'm not referring to the holiday sounds riding the wind or the chill in the air. I referring to the time of year when Cuties are in season! For about 100 day, beginning in late October to early November, something magical happens in the groves of California.

Trees that have been working since spring finally begin to bear their fruit, and the 100 days of sunshine begins. Cuties season and that means our delicious citrus cake made with Clementine's. These juicy balls of deliciousness are purchased in bulk in this home. I eat one daily and so does my son. We absolutely love Cuties in our household. They are great in a packed lunch and are the perfect snack for our kids. They are easy to peel, seedless, and easily fit in a child's hand. Peeling one is like opening a little bundle of spring at the tail end of fall. Your nose is hit with that sweet citrus scent, and anticipation of that first bite begins. And let me tell you, Cuties taste fantastic.

Directions

  1. Peel the cuties with a knife, being sure to remove all outside skin and membrane.
  2. Slice the fruit into ¼ inch thick wheels. Gently toss with the sugar, and then refrigerate for at least one hour.
  3. For whipped cream: Mix together 2 cups of heavy cream with ½ teaspoon of vanilla and ⅓ cup powdered sugar. Whisk until stiff peaks form.
  4. Place one piece of cake on a plate. Top with macerated Cuties.
  5. Drizzle the syrup from the Cuties on the cake and plate.
  6. Top with whipped cream, and garnish with a mint spring.
