Apple Cinnamon Pancakes

We all love pancakes in this house and especially apple and cinnamon pancakes. I mean what's not to love about pancakes? Pancakes are easily one of the all-time favorite breakfast foods. However, do you know what is in the syrup you are pouring on that golden stack of deliciousness of pancakes? I have to confess that I was not always certain what kind of pancake syrup I was using.

 

That changed when I was introduced a few years ago to organic pancake syrup or real dark maple syrup. And use it on top of these apple pancakes? It's delectable.  I wanted to make certain that I knew what I was eating. We hope that you love this Apple Cinnamon Pancakes recipe.

 

Apple Cinnamon Pancakes

Ingredients for apple cinnamon pancakes

Ingredients for topping

  • 1 Granny Smith apple, peeled and diced
  • ¼ tsp cinnamon
  • 2 tsp pure maple syrup
  • pecans

Apple Cinnamon Pancakes

 

Directions

  1. Whisk all of the dry ingredients together in a large bowl. Whisk the remaining ingredients together in a separate bowl. Make a well in the center of the dry ingredients and slowly add the wet ingredients, whisking until combined. Do not over mix.
  2. Let the batter rest without stirring it, touching it, or in any way disturbing it for about 15 minutes. We are giving the baking powder time to do its thing here.
  3. Heat a large nonstick pan over a medium flame.  Lightly spray the pan with cooking spray, measure out ¼ cup pancakes, and cook.  When the edges of the pancakes begin to dry and small bubbles begin to form on the top, flip with a fish spatula.  Cook another 2-3 minutes and serve.  Rinse and repeat with the rest of the batter.
  4. Apple cinnamon topping for pancakes: Heat a saute pan over a medium flame.  Add the apples and cook until they begin to color.  Add the cinnamon and syrup, and cook for another 30 seconds. Remove from the flame.
  5. Brush the pecans with maple syrup and add to saute pan. Sprinkle a little salt and on medium flame. Stir and toast the pecans for about 5-7 minutes. Add more maple syrup if desired.
  6.  Use spoon to top pancakes with apple mixture and then pecans.

Easily make these pancakes into apple cinnamon protein pancakes by adding 2 scoops of vanilla protein powder but you may need to add more liquid like buttermilk because protein powder tends to really dry out pancakes. Blend your topping mix slightly for an apple cinnamon compote for pancakes. We hope that you are inspired by these Apple Cinnamon Pancakes. Happy cooking!
