If you are searching for a caramel apple tart, then look no further. What is interesting is that we LOVE the Omaha Steaks caramel tartlets. Friends gave us some for the past few Christmases and honestly, we have to hide them from the kids in a box in the freezer that they believe are vegetables. Our caramel apple tartlets sit on a bed of sweet rice that is warm and delicious. Then with the apple filling and flaky crust, you kind of have the trifecta of apple tart goodness. Directions

  1. Start with the sweet sticky rice. Place the apple juice, nutmeg, cinnamon, and honey in a pot.  Bring to a boil.
  2. Add the rice, stir, cover, and remove from heat.  Allow the mixture to rest for 5 minutes.
  3. Transfer the rice to a shallow pan and refrigerate until cold.
  4. Heat the butter in a saute pan over a medium flame.  Once hot and bubbling, add the apples, walnuts, and sugar.
  5. Cook for about five minutes, until the apples soften and begin to slightly brown.
  6. Stir in the cinnamon and remove from the flame.  Refrigerate.
  7. Next, assemble the caramel apple tart. You need 1 box of mini tartlet shells, 1 recipe of rice mixture, and 1 recipe of apple mixture.
  8. Fill each tartlet shell to the top with the rice mixture (about 1 heaping tablespoon of rice).  Press the rice lightly into the shell.
  9. Top with the caramel apple mixture. Enjoy.
