Ingredients for the rice


  1. Place the apple juice, nutmeg, cinnamon, and honey in a pot.  Bring to a boil.
  2. Add the rice, stir, cover, and remove from heat.  Allow the mixture to rest for 5 minutes.
  3. Transfer the rice to a shallow pan and refrigerate until cold.

  1. Heat the butter in a saute pan over a medium flame.  Once hot and bubbling, add the apples, walnuts, and sugar.
  2. Cook for about five minutes, until the apples soften and begin to slightly brown.
  3. Stir in the cinnamon and remove from the flame.  Refrigerate.

Assemble the Caramel Apple Tartlets with sweet rice

  1. Fill each tartlet shell to the top with the rice mixture (about 1 heaping tablespoon of rice).  Press the rice lightly into the shell.
  2. Top with the apple walnut mixture.
  3. Enjoy.
