No Bake Chocolate Cheesecake with OREO Crust Recipe

There is no better sweet in life than chocolate cheesecake. I just cannot get enough although I do love all cakes equally, cheesecake tends to top the list. I didn't even try cheesecake for the first time until I was an adult in my early twenties. I had no idea what I had been missing all of my life. Cheesecake can indeed solve the majority of the world's problems in my opinion and this no-bake chocolate cheesecake is no exception. No-Bake Chocolate Cheesecake with OREO Crust Recipe

Ingredients

• 8 oz semisweet chocolate chips
• 2 tbsp milk
• 2 8 oz packages of cream cheese, softened
• ½ cup brown sugar
• ½ cup white sugar
• 12 OREO Cookies
• shaved chocolate
• marshmallows
• OREO Cookie for topping

Directions

1. Line a cupcake tin with cupcake liners and place 1 chocolate cookie in the bottom. (Oreo cookies work great for this)
2. In a large mixing bowl combine cream cheese, milk, brown sugar, and white sugar. Mix until well combined.
3. In a microwave-safe bowl, microwave semisweet chocolate chips in 20-second intervals, stirring in between until completely melted. You can also use a double boiler for this if you would like.
4. Combine cream cheese mixture and melted chocolate until well incorporated.
5. Pour cheesecake batter into your cupcake liners, tapping the pan after each pour to remove all air bubbles.
6. Refrigerate for 2-3 hours, or until firm.
7. Remove cheesecake from liners. Add shaved chocolate, OREO, and marshmallows on top. Serve.
8. Refrigerate leftovers in an airtight container.
