Ingredients

  • 10 oz. premium albacore tuna, drained
  • 2 cans white cannellini beans, rinsed and drained
  • 8 cups mixed greens (we used Bibb, Endive and Red Leaf lettuce)
  • 2 small cucumber, chopped
  • 1/2 cup scallions, sliced finely
  • 1/2 cup of basil leaves finely chopped
  • 6 small heirloom tomatoes cut into quarters (we used German Red Strawberry)
  • 1/2 cup extra virgin olive oil
  • 1/4 cup of Balsamic vinegar (we used the 25 year old bottle that we bought in Italy)
  • 2 medium sized lemons
  • coarse salt
  • freshly ground pepper

Tuscan Tuna and White Bean SaladDirections

  1. In a large mixing bowl, add albacore tuna beans, scallions, cucumber, basil, heirloom tomatoes and 1 tablespoon of lemon zest. Mix together. I do this with my hands.
  2. In a small bowl, add the olive oil, Balsamic vinegar and 4 tablespoons of lemon juice. I used the salt grinder and ground about 1 teaspoon of salt plus 1 1/2 teaspoons of pepper into the bowl. Whisk everything together. Sometimes I add more salt and pepper to taste.
  3. Add lettuce to mixture in large bowl and pour dressing over everything. Toss well to combine.
  4. Serve immediately or cover tightly refrigerator.
