Who doesn't love a good breakfast in bed? I know that I do and once or twice a year when my family is so inclined, I will happily accept a tray of my favorite breakfast foods and dine while in bed. These pancakes taste great as is or you can add your favorite topping and it is just absorbed into each pancake. Essentially you get syrup in every bite or honey or jelly or lemon curd. They seriously are so delicious and super easy to make. Cooking them this way makes the bottom more like the consistency of French toast, which I love!

Ingredients

  1. In a large bowl, whisk the flour, white sugar, baking powder and soda and salt together.
  2. In a separate bowl crack and whisk the egg, then slowly whisk in the butter milk and really soft to melted butter, then mix into the bowl with the dry ingredients. Whisk until smooth, add a dash more buttermilk at a time if you would like a thinner consistency. When fully combined add in a tiny bit of the pink food coloring at a time until you achieve the shade you would like.
  3. Let the batter sit for a couple minutes while you heat your skillet to medium low and rub with a small amount of butter or coconut oil. Ladle, scoop or pour the batter onto the skillet. You will not flip the pancakes, the low heat will slowly cook the batter all the way through without overcooking the side touching the skillet. The batter will develop air bubbles that will pop on their own creating the light, airy and cloud like look and texture.
  4. The pancakes will be done when the ‘batter’ is no longer shiny and wet looking on the top. Remove from the heat and enjoy right away.
