Pico de Gallo with Vidalia onions

Pico De Gallo with Vidalia Onions Recipe #VisforVidalia
We were inspired by a huge bag of Vidalia Onions we received after our recent farm tour and visit to the Vidalia Onion Festival. There were tons of things that we wanted to create but we started first with our fabulous salsa and made it even better with Vidalia Onions.
Pico de gallo is a bright, fresh, colorful and flavorful salsa with a hint of heat. Literally translated as “rooster’s beak,” this Mexican condiment differs from traditional salsa in the amount of liquid it contains; pico de gallo is traditionally drier.
As written, this recipe produces a flavorful dip for chips that has a tolerable amount of spiciness. For a bigger kick, double the amount of jalapeños listed below. When cutting the jalapeños, be sure to wear gloves, especially if you have any open cuts on your hands. Do not touch your hands to your eyes, lips, or other body part, as the heat can produce an uncomfortable burn.
