Lemon Curd Pound Cake Recipe

Ingredients

  • 1/2 pound butter, room temperature
  • 2 1/2 cups sugar
  • 4 large eggs, at room temperature
  • 3 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 1/3 teaspoon kosher salt
  • 1 1/4 cup lemon curd, plus more as needed for topping
  • 1/2 cup http://Lemon Curdbuttermilk
  • 1 1/4 teaspoons vanilla
  • 1/8 cup lemon zest

Lemon Curd Pound Cake Recipe

Directions

  1. In a mixer, beat the butter and sugar until light and fully mixed. Add the eggs one at a time until fully incorporated.
  2. In one bowl, sift together the flour, baking soda, baking powder, and salt. In a separate bowl, combine the lemon curd, buttermilk, vanilla, and lemon zest.
  3. Mixing the butter, sugar, and egg mixture on low, alternate adding the flour mixture and lemon curd mixture, starting and ending with the flour mixture.
  4. Preheat the oven to 350°F.
  5. Grease a bundt cake pan and dust with flour. Pour the batter into the bundt pan, then bake for 1 hour, or until a toothpick inserted into the thickest part of the cake comes out clean.
  6. Cool the cake completely, then serve with additional lemon curd as needed.

    This looks like it would go well with a cup of coffee! I love that you make your own lemon curd! The first time I ever tried lemon curd was when my SIL made it and I was hooked.

    There isnt many things that can beat a good pound cake. I have never made lemon curd. Lemons arent plentiful here although in the winter (now) they are a bit less expensive. I would love to try these with those Myers lemons, that would be so good!
