I'm a HUGE fan of guacamole (I mean who doesn't like it?) but after seeing a post with 35 different ways of whipping up guacamole, I knew I had to twist a bit my tried and true recipe. I mean if traditional guacamole is delicious how would a loaded guacamole be? The answer? SO GOOD! So here's a Bacon Cheddar Guacamole Recipe that I'm sure you are going to find yourself making again and again.

Just think about it for a second you get the creamy avocado then the salty cheese (a lot of it) and then all the crunchy bacon + all the other delicious things that are part of guacamole (like red onion and cilantro and lime juice and salt). So it's obviously an explosion of flavors.

Needless to say, this recipe has been a total crowd favorite! You can serve it with chips, bread, crackers, and veggies but I also love to toast some flour tortillas in the oven and serve it with them. Or you know what? Just forget the chips and eat it with a spoon directly from the bowl.

But back to the bacon and cheese guacamole, there are a couple of things you need to do in order to make this bowl deliciousness mind blowing good.

4 Quick Tips for the BEST Guacamole

1. Make sure the avocado is chunky. A chunky avocado is just as creamy but way tastier
2. Go big on the lime juice.
3. Mix in the guacamole a lot of cheddar and bacon and then use more cheddar and bacon to decorate the top. Needless to say, this is one of those recipes where the more the merrier.
4. Make it fresh, while I would love that this recipe could be made ahead, truth is guacamole get's kind of ugly while sitting in your fridge + whipping it up takes 5 minutes tops so it's not like making it fresh takes long.

Bacon Cheddar Guacamole Recipe

Ingredients

  • 6 strips bacon
  • 2 Avocados
  • 1 cup Cheddar cheese, shredded
  • ½ Red onion
  • ¼ Cup cilantro
  • ⅛ Cup green onions
  • ⅛ Cup lime juice
  • 1 Tsp garlic powder
  • Salt to taste

Directions

  1. Chop the bacon and take to a pan over medium-low heat. Cook until crispy.
  2. While cooking the bacon, slice the avocados and take to a bowl.
  3. Using a fork, mash the avocados.
  4. Once the bacon is ready, save some for garnishing and add the remaining to the bowl with the avocados.
  5. Add the cheese and mix everything together (save some cheese for garnishing).
  6. In a cutting board, chop the red onion, cilantro, and green onion and transfer to the bowl.
  7. Add the lime juice, garlic powder and salt.
  8. Mix everything together   
  9. Garnish with the remaining cheese, and bacon.
  10. Serve with nachos and enjoy.

    What a beautiful dish! Guac is one of our favorites …and I love the addition of bacon. Looks perfect for game day!
